this recipe is an adaptation of the Fannie Farmer Cookbook's "baking powder biscuits"
ingredients:
1 cup Glutino gluten free all purpose flour
1/4 tsp salt
2 tsp baking powder
1/2 tbsp sugar
1/4 cup vegetable shortening + a bit more
1/3 cup Lactaid milk
what to do:
grease a baking pan with a bit of shortening
in a bowl, mix the flour, salt, baking powder, & sugar
add the 1/4 cup shortening & cut it into flour many times (see picture)
add the milk & stir until flour is moistened, will still be lumpy
lightly flour a cutting board & place dough on board
knead (press with palms of hands) seven times
pat dough down on board until it's a 1/2 inch thick
cut with cookie cutter or small cup's edge into 2 to 3 inch rounds
place rounds with edges touching in pan (see picture)
bake in preheated oven at 425 for 18 minutes or until lightly brown
makes:
6-8 biscuits
notes:
i don't know why but i've never been able to get my biscuits to rise, whether i use flour or gluten-free flour, so we just enjoy very flat biscuits...and sausage gravy makes flat biscuits delicious!
