sweet & sour chinese











ingredients:
1 cup cooked rice
1 cup chopped red & orange bell pepper
1 cup chunks of tofu (vegan version) or left-over pork chop or chicken (for meat eaters)
1/2 cup chunks of canned pineapple, drained & well-rinsed with water
1 tbsp olive oil
1/8 cup La Choy sweet & sour sauce (contains tiny bit of corn syrup & green bell pepper)
raw almonds optional

what to do:
cook rice, set aside
in sauce pan, saute bell pepper in olive oil on medium heat until peppers start to brown
add chunks of tofu or meat left-overs, and stir well until warm
add chunks of pineapple
add sweet & sour sauce & stir until it coats all ingredients
serve over rice
top with almonds if you want

makes:
2 servings

notes:
i like to add a dash of cayenne to my plate
tamari sauce is also good with it
