ingredients:
3 small red potatoes (or any kind of potato)
1 thick slice of ham
1/2 cup chunks of Boar's Head vermont cheddar cheese (white or yellow)
1/2 cup water
plus:
1 microwaveable ceramic bowl
2 thick sheets of paper toweling
what to do:
cut potatoes, cheese, and ham into chunks
put potatoes and water in a microwaveable ceramic bowl, cover with paper towels, & heat for 3 minutes
remove paper towels, stir potatoes, & microwave for 2 more minutes
add ham & cheese chunks, stir, and microwave again for 30 seconds until cheese barely starts to melt
sprinkle with salt & pepper
makes:
1 serving
notes:
great for breakfast or a quick & easy lunch at work
Boar's Head vermont cheddar is lactose free, but not all cheddars are lactose free
