ingredients:
1 pound Lara's Lean ground beef
1 slice Rudi's original gluten-free bread
1 large egg
1 tbsp parmesan sprinkles
1 tbsp yellow mustard
2 tbsp Simply Heinz ketchup
1/2 tsp italian seasoning
1/4 tsp salt
2 small red potatoes, diced in small chunks
1/2 of a yellow squash, diced in large chunks
1 tbsp olive oil
extra salt
what to do:
toast Rudi's bread on the lightest setting 4 times until the bread is dry, not burned
slice toast into thin strips & then cut other direction, creating bread crumbs
use hands to mix bread crumbs, beef, ketchup, mustard, parmesan, salt, italian seasoning & egg in large bowl
form into a loaf shape & place into loaf sized baking dish
wash hands well
in another baking dish, mix vegetables with olive oil & lightly salt
cover vegetable dish with aluminum foil
bake both dishes on 350 degrees for 45 - 60 minutes until done
cut into middle of meatloaf to check for pink meat; if still pink, cook longer
stab potatoes with fork to make sure they are soft and well-cooked
makes:
4 servings of meatloaf & 2 servings of veggies
notes:
if your guts don't mind onion powder, add 1/4 tsp onion powder when mixing meatloaf ingredients
